With a 60% rise in searches for pistachios since 2019 along with a 15% increase in interest in the pistachio as an ingredient, the little green nut’s popularity isn't slowing down. Pistachio is emerging as a top flavour trend for 2025 making its way into everything from ice cream and butter to lattes and cream-filled croissants. 

Dubai chocolate 

This unique, exotic treat took flight on social media last year, with one video garnering over 100 million views on TikTok. It's a thick slab of laminated milk chocolate stuffed with sweet pistachio cream, tahini paste and kadayif (giving the chocolate its irresistible crunch) - and nearly eighteen months on from its viral moment, it doesn't look like this one is going away any time soon. 

Fermented foods 

Another food trend hitting hospitality this year is fermented foods. Statista estimates that the global fermented foods and beverages market, currently valued at nearly $575 billion, will rise to over $989 billion by 2032. Fermented foods have been a staple in Eastern and Asian diets for centuries, but only recently they've gone from zero to hero in the mainstream.
